Healthy 3 ingredient Bounty Bars

One of my favorite candies as a kid was Bounty, those little coconut bars covered with chocolate were my weakness. I just love anything coconut. But of course, like most candy bars, they’re not vegan. I didn’t wanna give up such a yummy treat though, so after a few attempts, I figured out a way to make my own vegan and delicious Bounty bars!


Makes about 8 bars

  • 1 cup desiccated coconut (a bit less if you’re using a pretty thick yogurt)
  • 1/3 cup soy yogurt – coconut flavor (I use this from Alpro), regular plain coconut yogurt works fine too
  • 150 gr dark chocolate



Mix the coconut and yogurt in a bowl until you get a sticky but malleable mixture. With your hands shape it into little bars, and place them on a plate or tray that is small enough to fit in your freezer. This step can be a bit challenging, what I suggest is washing your hands before shaping the bars so they don’t stick too much to your hands.
Once they’re all done, pop them in the freezer for about 2 hours.

Check the bars after the time has passed, and if they’re hard, then start melting the chocolate. You can do it in a microwave, but I prefer doing it on the stove using a double saucepan. (If you don’t have one you can simply take a heatproof bowl and put it a small saucepan filled about halfway with simmering water).

Once the chocolate has melted, take out the coconut bars from the freezer and quickly dip each one of them in it, do it fast otherwise they will start crumbling and melting.

Once they’re all covered in chocolate, set them on a wire rack or parchment paper to cool down for a few minutes. Then stick them back in the freezer to harden another time. After about an hour, take them out and store them in the fridge so you don’t break your teeth when you try to bite one. I made that mistake before.

And there you have it, enjoy before they’re all gone!

NB: make sure the temperature in your fridge is high enough for the chocolate to stay hard and not melt.
You can also keep the Bounties in the freezer and just take one out and let it soften whenever you feel like having one.
